Bengali Mix veg dal is one of a Bengali vegetarian recipe, which is usually made at any ceremony house and served with rice, or at any get-together. At my house it is made during winter days cause at that time all the veggies which are used in it are widely available and fresh.
This Dal is tasted so good that whenever it is made in my house I finish my full plate of rice just with this. It's quite filling dish cause it has many vegetables in it, that make the dal thicker and one ball of it can keep you full for long.
It's a great option for an Indian vegetarian dinner, you can have it with roti or with rice as well. Or if you are on a diet you can have one bowl of this dal without any roti or rice.
Lentils are called dal in Bengali. We usually cook lentils as a soup but for using so many veggies, mix dal gets thicker and quite filling.
Usually, moong dal is used here for mixed veg dal, it has a good amount of protein and fiber and other minerals also. And from the veggies which are used here, this dal is full of nutrients and very healthy.

2. The moong dal can be dry roasted instead of frying, if you are on a diet you can just dry roast it before boiling. But in authentic Bengali mix veg dal, the moong dal is fried in ghee cause it's the best combination and the aroma of it increases the deliciousness of the dish.
3. Do not use too much of salt for anything cause in this recipe salt is added several times so it can spoil your dish, so add a little bit of salt each time and always check before adding.

5. Do not use too much oil in this dish, make it as healthy as possible, and let the dal cook using water.
6. This dish isn't too much spicy or savory, it actually tastes a little bit sweet, that's why we use 1 tsp of sugar in it to balance the saltiness in it.

Ingredients:-
1. Moong dal 100 g
2. Ghee 2 tsp
3. Oil 4 tsp
4. Water 2 cups
5. Chopped Cauliflower ½ cup
6. Chopped carrots ½ cup
7. Chopped beans ½ cup
8. Peas ½ cup
9. Chopped tomatoes 1 cup
10. Bay leaves 2 (medium size)
11. Cardamom 2-3
12. Cloves 2-3
13. Jeera 1 tsp
14. Turmeric powder 1 tsp
15. Cumin powder 1 tsp
16. Salt to taste
17. Suger 1 tsp
18. Dried red chillies 1-2
19. Green chillies 2-3
20. Chopped coriander leaves

Preparation:-
• First we need to cook the dal, for that take a pan and add 2 tsp of ghee, then add properly washed moong dal in it, and start stirring the dal. You have to Stir for 2-3 minutes and after that when it gets golden brown to add 2 cups of water in it, add some salt to taste and 2-3 sliced green chilies. Then cover the pan, allow it to cook on a medium-low flame for 5 minutes.
• In this time fry the veggies. For that take a pan to add 3-4 tsp oil in it, when the oil heats up add chopped cauliflower, chopped carrots, chopped beans and peas in it. Add some salt to taste and 1 tsp of turmeric powder, stir well and cover the pan for 5 minutes.
• Now open the pan of dal, if it Soaked all the water you need to add some more, check if it's cooked properly or not. If it's done turn off the flame and leave it.
• Now check if your veggies are fried or not, do not need to cook it too much cause we will cook it again with the dal. When it's fried remove the veggies from the pan.

• After stirring well when the mixture is cooked add the boiled lentils or dal in it and mix everything well, if you think it's too thick you can add more water in it, now on a high flame stir the dal, and mix everything nicely, you can check if more salt is needed or not, cause we have used salt several times before, so do not ad without checking.
• When the dal starts boiling and the water is properly soaked your mix veg dal is absolutely ready to serve.
This Bengali mix veg dal is very tasty and healthy as well, it's full of nutritious vegetables, we have just used cauliflower, carrots, beans, and peas. But you can use any veggies like pumpkin, brinjal, or gourd, it depends on your choice.
