Mutton curry is a widely famous dish all over, but when it comes to Indian Mutton curry you know it's always mouthwatering. But do you know about Golbari Mutton kosha?

If you are from Kolkata, you absolutely know about this heavenly Indian Mutton curry, but if you are outside of Kolkata, and you don't know about this dish, then you are horribly missing this awesomely tasty Mutton curry.

Let me clarify, that "Golbari" is a very famous restaurant in Kolkata, which is also many years old, it's a small restaurant, where not just Mutton curry but many delicious meat dishes are available. And it's heaven for meat lovers.

Their meat curry has some speciality like it's dark blackish in colour, which we believe that comes from cooking in in an iron wok, and they're always some oil floating on top of their Mutton curry.

From several States, people come just to try it, and I do not think that there is any person who lives in Kolkata but hasn't try it yet. You can have it with some steamed rice or roti, or with paratha also, and it's just too good.

Not just extremely famous but this recipe of kosha mangsho is extremely delicious also.
In Bengali meat is called 'Mangsho' and 'Kosha' means a curry, which is loaded with aromatic spices and oil.

So we call famous Golbari Mutton curry as "Golbarir Mutton kosha".
The flavours they serve in their Mutton curry can't be compared with any restaurant, and I believe that the secret recipe of it, can be made by them also. But I wanted to make our own version of "Golbari kosha mangso", which can be easily made at home.

Although it cannot be compared with the real Golbarir Mutton kosha or Golbarir kosha mangso, it's also very similar to it, and the main thing is it's also very delicious and mouthwatering.

After giving it a try at home I was very happy with that causes it tastes so good, so I decided to share this recipe with all of you.

So am telling you, to try it at home and you can't ever forget the flavours of it for sure, how to make Golbari style mutton kosha or Golbarir kosha mangso recipe, you just need to follow some instructions and tips given by me. And you would end up making a delicious and flavoursome Mutton curry or Mutton kosha.

You can serve it as a main course dish with just normal rice or with paratha, and enjoy a delicious Indian Mutton curry at home.

Some tips:-

1. As the speciality of this dish is it's dark brown colour, for that if you have an iron Kadai, or iron wok use it. It will help you to get the dark colour in your Mutton curry.

2. There are some other processes which I have used, like using some caramelized oil, and liquor of tea also helps a lot to get that dark brown colour in the special Golbari style Mutton kosha.

3. The onions should be sliced very finely, and also you can use your hands and open the layers of the sliced onions,

it gives a nice texture in the gravy and also helps to caramelize well.

4. I prefer to use Kashmiri chilli powder in Golbarir Mutton kosha recipe, cause it increases the colour of this dish, and also not too much spicy. But you can use normal red chilli powder also.

5. As we are cooking this Mutton curry in a pan or Kadai, and not using any pressure cooker, the meat takes more time to cook well. To make the process a little bit quicker, you need to use raw papaya, as it helps a lot to cook the meat quickly.

6. Usually, I use cubed raw papaya in mutton curry, but for this special Golbari kosha mangso or Golbarir Mutton kosha, am using grated raw papaya, so that it can be mixed well with the meat. And also use it at the time of marination, and again add some at the time of cooking.

7. And for this recipe, marinating the Mutton is very important, and it should be at least 5-6 hours, or overnight can be the best.

8. As this Golbari style Mutton kosha is cooked without a pressure cooker, it always takes time, and how much you'll cook it, it'll help to get the dark colour of this dish.


Ingredients:-


1. Mutton 700 grams
2. Chopped onions (3 medium sizes)
3. Onion paste (2 medium sizes)
4. Ginger paste 3 teaspoon
5. Garlic paste 2 teaspoon
6. Grated raw papaya 2 tablespoon
7. Whole garam masalas (2 bay leaves, 3-4 cardamoms, 3-4 cloves and 1 Cinnamon stick)
8. Mustard oil 5-6 tablespoon
9. Beaten yoghurt 2 tablespoon
10. Turmeric powder 2 teaspoon
11. Kashmiri chilli powder 2 teaspoon
12. Cumin powder ½ teaspoon
13. Coriander powder ½ teaspoon
14. Garam masala powder
15. Salt to taste
16. Suger 2 tablespoon

Preparation:-


Marination-


• Add the Mutton pieces into a bowl, then add 2 tablespoons beaten yoghurt, 1 tablespoon onion paste, 1 teaspoon ginger paste and 1 teaspoon garlic paste, 1 tablespoon grated raw papaya,

1 teaspoon turmeric powder, some salt to taste, 2 tablespoon mustard oil. Then mix well using your hands, and let it marinate for overnight or at least 5-6 hrs.


Preparing Gravy-


• Add 4 tablespoon of mustard oil into the pan, when it heats up add the whole garam masalas into the oil, 2 bay leaves, 3-4 cardamoms, 3-4 cloves and 1 Cinnamon stick.

Stir it for 1 minute then add the finely chopped onions, then stir in on a high flame for 2 minutes. Now add 2 teaspoon ginger paste and 1 teaspoon garlic paste, then again stir well.

• Now take another pan and add 2 tablespoons of mustard oil in it, once the oil gets hot add 1 tablespoon of sugar.

Stir it well on a high flame until the sugar gets caramelized, and the oil and sugar mixture

gets dark brown. When it's done turn off the flame and add this caramelized oil into the pan.

• Now mix the oil with the onions, stir well again until the onions get nice and brown. Then add the marinated Mutton into it, add 1 tablespoon beaten curd, some salt to taste, ½ teaspoon turmeric powder, 2 teaspoon Kashmiri chilli powder, ½ teaspoon coriander powder, and

½ teaspoon cumin powder, now gives it a nice mix. Now add 2 teaspoon garam masala powder and again mix it.

• Now cover the pan and leave it on a medium-low flame. You need to stir the Mutton in every 10 minutes, it needs to be cooked for at least 50-60 minutes.

After 30-40 minutes add 1 teaspoon sugar, mix well and again cover the pan, and let it cook for another 20-30 minutes.

• After almost 55 minutes check the mutton is properly cooked or not, and it should release the oil if it's done then add 2 tablespoon liquor of tea,

then mix it well with the Mutton, let it cook for another 5 minutes, and then your delicious Golbari style Mutton kosha is ready.

This mouthful Golbari Mutton kosha recipe is very easy and awesomely tasty, try it at home and you'll never forget it's heavenly taste.
