½ cup powdered erythritol (or monk fruit sweetener),

1 tsp vanilla extract,

¼ tsp salt2 egg yolks (optional, for extra creaminess)

 

Instructions:

 Heat the Mixture – In a saucepan, combine the heavy cream, almond milk, and sweetener and heat on low to warm the mixture (do NOT boil).

Whisk the egg yolks (optional) – In a separate bowl, whisk the egg yolks, then add some of the warmed cream slowly while continuing to whisk. Pour this egg mixture back into the saucepan and continue to stir for 2-3 minutes.

Add the Flavor – Remove from the heat, add in the vanilla extract and salt, and allow to cool in the pot.

Chill – Refrigerate until cold (2 hours at least).Churn or Freeze - If using an ice cream maker, churn to manufacturers' instructions.

If not, pour the mixture into a container and place it in the freezer. Stir the mixture every 30 minutes for 3 hours to develop the creamy texture.

Serve & Enjoy - Let sit on the counter for 5 -10 minutes prior to scooping for the softest creamy texture!

2 ripe avocados (peeled and pitted)

1 tbsp coconut oil (optional, for extra creaminess)

 

Instructions:

Blend the avocados – In a blender or food processor, add the avocados and blend until smooth.

Add remaining ingredients – Add cocoa powder, sweetener, almond milk, vanilla extract, salt, and coconut oil. Blend until creamy. Mix until smooth and creamy. If needed, add a little more almond milk for a softer texture.

Mix Dry Ingredients- In microwave safe mug, add the almond flour, cocoa powder, sweetener, and baking powder.

Add Wet Ingredients- Pour in the melted butter, almond milk, vanilla extract, and egg, and stir until thoroughly mixed.

Microwave- microwave the mug for 60-90 seconds (cook until cake is set; you may need to adjust time depending on microwave power)

Cool & Enjoy- Allow the mug cake to cool for a minute before eating.
