Ingredients-
For Marination:-
1. Chicken 500 g2. Ginger garlic paste 2 tsp
3. Red chili powder 1 tsp
4. Salt 2 tsp
Karai masala:-
1. Fennel seeds 1 tsp
2. Dried red chilies 2-3
3. Coriander seeds 1 tsp
4. Black peppercorn 1 tsp
5. Jeera 1 tsp

For Gravy:-
1. Ghee/Oil 3 tsp
2. Crushed garlic 3-4 clove
3. Sliced ginger
4. Turmeric powder 1 tsp
5. Red chili powder 2 tsp
6. Garam masala powder 1 tsp
7. Coriander powder 1 tsp
8. Jeera powder 1 tsp
9. Chopped tomatoes 1 cup
10. Hot water 2 cups
11. Beaten curd 1 cup
12. Fresh cream 2 tsp
13. Diced capsicum ½ cup
14. Diced onion ½ cup
15. Sliced green chilies 3-4
16. Chopped coriander leaves

Preparation-
Marination:-
• Add chicken pieces in a bowl, add 2 tsp salt, 2 tsp of ginger garlic paste, 1 tsp red chili powder then mix well. And leave it for 15 minutes to marinate.
Preparation of karahi masala:-
• Take a pan to add 1 tsp fennel seeds, dried red chilies (2-3), 1tsp coriander seeds,1 tsp black peppercorn, 1tsp jeera, then dry roast it for 2-3 minutes, then leave it to cool down and after that grind into a powder and make the Kadai masala.
Preparation of gravy:-
• Add 3 tsp ghee or oil on a pan when the oil heats up add the marinated chicken in it, stir it well for 10-12 minutes on a high flame and then cover it for 7-8 minutes.
• After 8 minutes add crushed garlic, thinly sliced ginger, 1 tsp Turmeric powder, 1 tsp of coriander powder, 2 tsp red chili powder, 1 tsp jeera powder, then add the homemade Kadai masala. Mix well then add 1 cup chopped tomatoes and salt to taste, stir it for 2-3 minutes.
• Then add 200 mL of hot water and allow it to boil, cover it until the tomatoes are nicely cooked and make a thick gravy. After 5 minutes lower the flame and add 1 cup of beaten curd Stir until ghee/ oil is separated, then add 2 tsp fresh cream and 1 tsp garam masala powder.
• Then add chopped capsicum, diced onions, sliced green chilies, chopped coriander leaves and cook for 2 minutes. Your fragrant and delicious Kadai chicken is ready to serve. It goes well with any type of parathas or Rotis. It will be mouthwatering.
