About the recipe:-

Shukto is a traditional Bengali vegetarian dish that is actually e a mix veg recipe. Karela or bitter gourd is the main ingredient of it but, without that several ingredients and vegetables are also included in it.

Like potatoes, raw papaya, eggplant, raw banana, pumpkin, sweet potato, drumsticks and so many.

This dish also has some special ingredients like sun-dried lentils dumplings which are called Daler bori in Bengali, it also includes milk, which gives it a nice white color. Cause too much masala silent used in it.

Ground poppy seeds are also used in it. Some people like to add the mustard paste these days but I have learned it from my mother and she doesn't use mustard paste so I am also not using it.


Last day my mom made it at lunch, as lockdown is going on so I thought I should share this dish with you all of you, cause it's very healthy and just need few veggies to make it. For that, I kept the recipe very easy and simple.


In the Bengali household it's a very common dish which we usually eat as an appetizer before the main course it has a little bit better test but it tastes so good.

It has a creamy texture from the milk and poppy seeds and the vegetables are also taste awesome. As it has so many veggies and fewer masalas in it, it's very healthy also.

It can be cook in 2 way, you can first fry all the vegetables then again cook it together and temper it with some spices,

or you can cook it together with the spices without frying separately. I have seen my mother cook it together without frying type veggies separately, it saves time and makes the preparation easier. That's why it's a simple and easy way to cook Shukto. 

It's an Indian vegetarian dish which your server at dinner or lunch. It's very healthy and tasty too.

Am gonna share some tips about the preparation of this dish:-

1. In authentic Bengali Shukto recipe, we never use any chilies. It's a fact about this dish that no spiciness should be there.

2. It actually tastes quite sweet cause most of the vegetables which are used here are a little bit sweet, and we also add some sugar in it, which balances the saltiness also.

3. It's a part of a full course Bengali meal, and we usually serve it at the beginning of the meal. It a combination of bitter and sweet in taste. 

4. Some people do not use any masala powder in it like not even turmeric also, and some like to use mustard seeds paste and grated coconut in it. But I don't use it cause I like to keep this dish as simple as possible.

5. You need to cut the .veggies into wedges or into big pieces. The potatoes, raw papaya, and raw banana should be properly peeled off. And the Karela or bitter gourd should be cut into thin slices cause it has a bitter taste.

6. The drumsticks should be peel off, you just need to peel a few fibers from its skin and cut into small pieces. The seeds of raw papaya should be properly removed.

7. If you don't have lentil dumplings or Daler bori, then no worries just skip adding these. It won't make any difference.

8. Before serving it don't forget to add some ghee in it. It's a delicious aroma in the dish and makes it more delicious.

 


Exact time to prepare Shukto:-

• Preparation- 20 minutes

• Cook- 30-35 minutes

• Total- 55-60 minutes

• Serve- 5-6 person



Ingredients:-


  1. Potatoes 2 (medium size)
  2. Karela / bitter gourd 2-3 
  3. Sweet potatoes 4-5
  4. Raw papaya ½ (medium size)
  5. Raw banana 2
  6.  Eggplant 1 (medium size)
  7. Drumsticks 3-4
  8. Chopped pumpkin 200gm
  9. Bay leaves 2
  10.  Panch phoron/ Indian five-spice blend 1 tsp
  11. Turmeric powder 1 tsp
  12.  Salt to taste
  13.  Suger 1 tsp


Other ingredients-


1. Daler bori/ lentil dumplings 10-122. Ground Poppy seeds 2 tsp3. Ghee 2 tsp4. Oil 4 tsp

Preparation:-


• Take a pan and add 4 tsp oil in it, when the oil heats up add the chopped karela or bitter gourd in it, add some salt to taste and fry for 4-5 minutes when it gets golden brown remove it from the pan.

• Then add the lentil dumplings in the oil, fry it for 4-5 minutes on a medium-low flame, when it gets golden brown in color remove it from the pan.

• Now if you think much oil is needed you can add, but I like to add less oil and cook the veggies in water so that it gets more healthy. Add 1 tsp panch phoron in the oil, and 2-3 bay leaves. When it splattered add potatoes, raw papaya in the oil, add some salt to taste and 1 tsp of turmeric powder.

• Stir it for 2 minutes, then add the chopped raw bananas and sweet potatoes, again stir for 1-2 minutes and add the drumsticks. Now add 2 cups of water, mix everything well and then cover the pan for 3-4 minutes on a high flame.

• After 5 minutes When the water starts boiling open the lid of the pan and stir well gently. Let the veggies soak the water. When it gets dry add ½ cup of milk and 2 tsp of ground poppy seeds in it, add some salt to taste and 1 tsp of sugar. Mix properly and if you think it's too dry add 1 cup water.

• Now add the fried bitter gourd and the lentil dumplings in it and mix everything well. Cover the pan again for 4-5 minutes, allow it to cook on a medium-low flame. After 5 minutes check all the veggies are nicely cooked or not. If not then again cook for 2 minutes. And Shukto is ready to serve.

• Now when it's ready before serving it spread 2 tsp of Ghee in it and give it a nice mix. You can add some grated coconut in it. Or can garnish it with grated coconut. Serve it hot with steamed rice.

As it has so many veggies in it, shukto is a healthy dish. Persons who are on a diet can include this easily in their diet. But as it has some sweet vegetables and also some sugar is added so it shouldn't be included in low carb diets.
