Hyderabadi biriyani or Hydrabadi dum biriyani is a famous biriyani of all over India. This biriyani recipe is easy to cook in your home. 


It is a perfect biriyani recipe to prepare for a dinner party. We use mutton in this biriyani recipe. Here is the step by step method of preparation of mouth-watering Hydrabadi dum biriyani.

Ingredients-

  1. Mutton pieces
   2. Long grain basmati rice
   3. Ghee
   4. Fried onions
   5. Ginger -garlic green chili paste
   6. Whole garam masalas
   7. Garam masala powder
   8. Red chili powder
   9. Turmeric powder
   10. Salt
   11. Chopped coriander
   12. Chopped mint leaves
   13. Saffron
   14. Milk
   15. Lemon juice
   16. Atta/ chapatti dough

Preparation-

1. First, make ginger garlic and green chili paste, then take some fried onions and grind it, add some water and make a nice paste, then marinate the mutton, 

for this take a bowl to add big mutton pieces, add ginger garlic and green chili paste, add 1 cup of yogurt, ½ tsp of turmeric powder, 2 tsp of red chili powder, finely chopped fresh mint and coriander leaves, 1 tsp of garam masala powder, 2 tsp lemon juice, 2 tsp salt then mix it well, then add the fried onion paste mix again nicely.

2. Then place the mixture into a pressure cooker to cook it quickly, you can cook it in a kadhai oi pan but then it will take much time to cook. Then add a little bit of water then cover it and allow to cook on high flame with 3 whistles, and then on a low flame for 20 minutes.

3. Take some long grain basmati rice and soak it for 20 minutes in lukewarm water, then take a pan to add some water and boil it, then add 4 tsp salt in it to flavour the rice, add 1 tsp of ghee, 

then add some whole garam masalas 2-3 bay leaves, 7-8 cloves, 3-4 cinnamon sticks, 3-4 cardamoms in the water, then cover it and allow to boil for another 3 minutes.


4. Then add the soaked rice in the flavoured boiling water, after 5 minutes check the rice a give it a gentle stir so that it doesn't break the grains, then when the rice is ¾ cooked drain the water. Then place the rice into a large bowl so that it cools quickly.


5. Then check the mutton, and if it's cooked then start layering for the biriyani. For this take a big pot and spread some ghee on the bottom of it, then add half of the rice then add the mutton with the gravy and 

then put the remaining rice on it, add 2 tsp of ghee on to of the rice, soak some saffron strands in warm milk add it on to the rice, sprinkle some chopped mint and coriander leaves, and some fried onions.


6. Now you have to cook it in Dum, for that takes some chapatti dough and put it on the edges of the pan on biriyani then cover the pan and seal it, then on a low flame cook it for 20 minutes, after 20 minutes turn off the flame and leave it for 5 minutes. Then open the pan and your biriyani is ready to be eaten.
