Aloo dum

Aloo dum is a very famous traditional Bengali vegetarian recipe it's called Dum aloo also in Hindi. Which is especially a very favourite dish of mine. It's also very easy to prepare and taste so good that I always end up by licking my plate. It's a dish with which every Bengali person is very familiar.

In Bengali families, it's usually prepared on weekends and holidays and usually served with freshly made puris or parathas.

This dish is very close to me cause my mother always make this for me and that has a heavenly taste. She used to make this on weekends on occasions when any non-veg foods aren't allowed. But this simple dish can beat any non-veg recipes.

I never need to learn it from my mother cause whenever she prepares it I always help her, so automatically I have learned this recipe.

Potatoes aren't that much favourite of mine I never prefer to eat too much of it in any Sabji, but when it comes to Aloo dum, I do not leave any chance to have it. It goes so well with luchi ( puri) , or with kachori, or with any type of paratha, or even with normal rotis.

It's rich and flavorful and full of spices. It has a spicy and tangy taste which I like the most it's the best option for an Indian vegetarian dinner. Or any time you can serve it as a main course dish.

Some tips:-

1. You can fry the potatoes before prepare this or you can also pressure cook or boil it to
make the process faster, but after boiling you need to fry it as well. Mustard Oil is usually used in Bengali families which gives a rich aroma in our foods.

2. You shouldn't use too much ginger paste in it otherwise that would leave a bitter taste which isn't good.

3. You need to Fry the masalas properly so that it can leave its aroma. And always wait until the masalas start releasing oil, that's the sign that it's properly done.

4. You need to add a little bit of sugar so that it can balance the

the spiciness of this dish, and it also increases the taste. In this recipe red chilli powder is used but if you want more colour than you can add Kashmiri chilli powder also.

which comes from the tomato sauce used in, you can use tomato puree as well but personally, I prefer using chop tomatoes, cause my mother does the same.



Exact time to prepare Aloo dum:-

• Preparation- 10 minutes
• Cook- 20 minutes • Total - 30-40 minutes • Serve- 4-5 person


Ingredients:-

To fry the potatoes:-


1. Big pieces of Potatoes 4-5( medium size)2. Mustard Oil 4 tsp3. Salt 2 tsp4. Turmeric powder 1 tsp



For Gravy:-

1. Oil 3-4 tsp2. Bay leaves 2-33. Jeera 1 tsp4. Chopped tomatoes 1 cup (0.24 liters)5. Turmeric powder 2 tsp6. Red chilli powder 1 tsp7. Coriander powder 1 tsp8. Cumin powder 1 tsp9. Garam masala powder ½ tsp10. Sugar ½ tsp11. Salt 2 tsp12. Water 1 cup (0.24 l)



Preparation:-


• First add 4-6 tsp of oil in a pan and when it heats up add the chopped potatoes in it. In this dish traditionally big pieces of potatoes are always used, then add some salt to taste and 1 tsp of turmeric
powder. Mix everything well and cover the pan, let the potatoes cook properly for 6-8 minutes. As the potatoes are cut in big pieces it would take some extra time to cook nicely.

• After 6-7 minutes check the potatoes if it's properly cooked or not, if not then again cover the pan and cook it on a medium-low flame for 3 to 4 minutes. The potatoes need to be nice and golden in colour. When the potatoes are properly fried remove it from the oil. And when you are removing it, strain the oil properly so that in that oil you can make the gravy. Using the same oil gives a nice flavour in the gravy.

Chicken Patiala is one of the famous cuisines of Punjab. It's also called Murg Patiala, it's an Indian chicken recipe and a delicious gravy chicken. It's loaded with fragrant spices and creamy gravy.
I have given the step-by-step instructions here with the ingredients and quantities, if you will follow the steps properly then for sure you would love it.

• If some more oil is needed then you can add also. After the oil is properly heads up add 2-3 medium size bay leaves and 1 tsp of jeera. Stir it and add 1 tsp of ginger paste and again stir for 1 minute, when the ginger is a little bit fried add the spices. Add 2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp cumin powder and 1 tsp Coriander powder. Mix everything well.

• Stir this spice mixture for 1 to 2 minutes, when it starts releasing a little bit of oil add those chopped tomatoes, you can at tomato puree as well instead of chop tomatoes. Now add some salt to taste and a little bit of sugar like ½ tsp is enough and add ½ tsp of garam masala powder, mix again properly and cover the pan to cook the masala nicely on a low flame.

• After 3-4 minutes when the masala Will star releasing oil add the fried potatoes in it. And mix it well with the masala. Then add ½ cup of water and mix gently, cover the pan again Allow the masala to soak the water and it would give a thick gravy. And it will also help to enter the taste into the potatoes.

• Open the pan after 4-5 minutes and Star stirring again until it gets thick and until the masala property cover the potatoes. If you want you can add more water as per your choice, when again the oil started releasing on top of the gravy, your delicious Aloo dum is ready.

You can garnish it with chopped coriander leaves, whole little Potatoes are also used to prepare Aloo dum but in India, those little Potatoes are specially available during the winter months. So when it's not winter we use big pieces of potatoes.

This dish is a little bit oily but without that, the spices can't be properly cooked. A bowl of Aloo dum has net 104 calories, almost 13 g of carbs and 4 g of fats. Which very minimal compared to its deliciousness.

Bengali foods are always very much flavorful and easy to make, the main thing is it doesn't require too many ingredients and even Bengali vegetarian recipes are very tasty that it can easily beat any non-veg dish.
