Students easy biryani recipe- 


It doesn't matter from where you are, we all know about biryani. Although it's a Mughlai cuisine, just not in India biryani is a famous dish across the world. It's an amazing mixture of rice and meat which is cooked with several Indian whole spices and ground spices.

 In this dish, tender pieces of meat are first marinated with yoghurt and other spices and then steamed with the rice followed by some other ingredients to make it more flavoursome.

There are many types of biriyani available these days, and also many regions have made their own versions of biriyani, like Hyderabadi dum biriyani or south Indian biriyani.

This dish has different layers of rice and meat, and when they mixed together that looks gorgeous. And when it comes to the taste, it's always very delicious. It's a dish which can be served at any occasion and it doesn't even require any side dish to compliment it.

Biriyani can be served as a main course dish at any party or it can be enjoyed on a holiday lunch or dinner with your family.

As it contains so many ingredients and also so little bit time consuming, it isn't possible for I want to prepare it at home, especially when it comes to students, they always want to prepare easy recipes which doesn't take too much time or require too many ingredients.

When I was a student I couldn't ever prepare it without the help of my mother but still, it takes too much time and efforts.

It isn't possible for a student to prepare it alone and that made me think about the very easy and simple but delicious biriyani recipe. Which can be prepared very easily by anyone and not just one today am gonna share 5 types of biriyani with you.

So if you are also a huge fan of biriyani like me, then go ahead and just make it at home. If you don't have meat then you can make Egg biriyani or Aloo biriyani or even veg biriyani also.

I gonna shared all the recipes here with step by step instructions, and every recipe would be having some tips to make it perfect and more delightful, don't forget to share your experiences after preparing it at home. It's one of my all-time favourite dish I can have this anytime, and I always like homemade biryani more than the restaurant ones.

In chicken biryani there are always four steps, first, marinate the chicken then prepare the rice then cooked chicken and then layer the rice and meat together.

It also includes many types of spices and ingredients. Saturday the chicken biryani I'm gonna share doesn't too many steps really very easy to make.

It doesn't require marination, and I have used fewer ingredients to keep it simple and delicious.


Exact time to prepare quick chicken biriyani:-


Preparation :- 5 minutes
Cook :- 35-40 minutes
Total :- 50 minutes
Serve:- 4-5 person


Ingredients:-


For the chicken-


1. Chicken big pieces 1 kg
2. Thinly sliced onions 2-3
3. Chopped tomatoes 2
4. Oil 6 teaspoon
5. Beaten yoghurt 1 cup
6. Biriyani masala 2 teaspoon
7. Ginger garlic paste 2 teaspoon
8. Salt to taste
9. Turmeric powder 1 teaspoon
10. Kashmiri chilli powder 2 teaspoon

For the rice:-

1. Basmati rice/Any long grain rice 600 gm
2. Oil 2 tsp
3. Whole garam masalas ( 2 bay leaves, 3-4 cloves, 3-4 cardamom, 1 cinnamon stick )
4. Salt to taste


Some tips:-


1. You can add potatoes in the chicken biriyani also. Just cut some potatoes into big pieces, then fry them with some salt and turmeric powder using some oil. Then add the fried potatoes into the Chicken curry.

2. You can add chilli powder according to you, it depends on how much spicy you want your chicken biriyani. I personally light to use Kashmiri red chilli powder it gives a nice red colour with some spiciness. You can add normal red chilli powder also.

3. The biriyani masala can be made at home, but as it's a quick and easy recipe that's why I like to use ready-made biriyani masala. It's easily available in markets.

4. You can add some hard-boiled eggs also in the biriyani. You just need to boil the eggs and then add into the rice when layering.

5. Ghee adds a distinct smell in every dish, if you add some ghee when layering the biriyani it will increase the flavours of it. You can use some yellow food colouring into the rice at the time of layering but I do not like to use artificial colours. Some people like to use saffron with some milk for additional colour, but as I wanted to keep the recipe simple I didn't use it. But if you want you can add it.

6. When layering the biriyani never press the rice on top of the chicken, always spread it gently using a spoon.

7. One of the most important thing to give dum to a biriyani or steaming it, you can to cover the pan with an airtight lid or if you don't have that after covering place some heavyweight utensils on it. So that it can be steamed properly.



Preparation:-


Preparing the rice-


• Take a pan to add 2 tsp of oil in it when the oil heats up add the whole garam masalas into it, give it a stir and then add 4 cups of water. Leave it on a high flame and when the water starts boiling add the long grain rice into it. Then cover the pan and allow it to cook for 5-6 minutes on a medium-low flame.

• After 5 minutes check the rice, it needs to be 70% done, then turn off the flame and strain the water from the rice. Then leave it and let it cool down for some time.


Preparation of the chicken:-


• Add 5-6 tsp oil into a pan, once the oil heats up add thinly sliced onions and stir until it gets nice and brown, then add the chicken pieces into it. Then cover the pan and let it cook for 5-6 minutes on a medium-low flame.

• After 6 minutes add 2 tsp ginger garlic paste, 1 tsp turmeric powder, and 3 tsp biriyani masala. And chopped tomatoes, Then mix everything well. Then Stir for 2 min add and 1 cup of beaten yoghurt and 2 tsp Kashmiri chilli powder. Mix well and again cover the pan for 10 minutes. Leave it On a medium-low flame.

• After 10 minutes Check if the chicken is properly cooked or not if you think it isn't cooked then again, cover the pan and cook for another 4-5 minutes, and if the gravy starts releasing oil then the chicken is ready.


Layering:-


• When the chicken is done remove the chicken pieces from the pan and leave some gravy into it then, at the bottom add half of the rice you cooked then add all the chicken gravy on top of it, and then add the remaining rice on top. After you've done the layering you can sprinkle some biriyani masala and spread some ghee.

• Cover the pan properly and place it on a medium-low flame for 8 minutes and then turn off the flame and leave it for 2 minutes. After 10 minutes open the pan and mix everything well. And your very easy and quick chicken biryani is ready.



The second one is Egg biriyani-

It's very easy, as we know eggs are very easy to cook and doesn't take much time at all, if you don't have meat, go for this egg biriyani, it's also very delicious. Prepare it at home and Don't forget to share your experience with us.

Cook :- 40 minutes
Total :- 50-55 minutes
Serve:- 5 person

Ingredients:-


For the eggs-

1. 5 hard-boiled eggs
2. Potatoes big pieces (3 medium sizes)
3. Thinly sliced onions 2
4. Beaten curd ½ cup
5. Cumin powder 1 teaspoon
6. Coriander powder 1 teaspoon
7. Kashmiri chilli powder 1 tsp
8. Turmeric powder 1 teaspoon
9. Salt to taste
10. Biriyani masala 2 teaspoon
11. Ginger garlic paste 2 teaspoon
12. Whole garam masalas ( 2 cardamoms, 2 cloves, 1 cinnamon stick)
13. Oil 4 teaspoon
14. Ghee 2 teaspoon
15. chopped onion 1

For the rice:-

1. Basmati rice/Any long grain rice 600 gm
2. Oil 2 tsp
3. Whole garam masalas ( 2 bay leaves, 3-4 cloves, 3-4 cardamom, 1 cinnamon stick )
4. Salt to taste

Some tips:-

1. You can use eggs without potatoes also, in this dish, and here also you can add an additional colour like food colouring or saffron strands with milk. But the masalas and Kashmiri chilli powder also give it a nice orange colour.

2. We always need to cook the rice 65-70% cause we again cook it after layering, it's important to prevent the rice from overcooking. And it's also very important When layering the biriyani never press the rice on top of the chicken, always spread it gently using a spoon.

3. I have used the water strained from the rice, into the gravy, cause it prevents the rice to stick at the bottom of the pan after layering.

4. As no meat is used here in this recipe, fried onions give it a nice smell and taste also, which gives the biriyani a delicious aroma.

5. In the gravy I have used the yoghurt mixture, it saves time, otherwise, you need to add everything into the pan and then need to mix. Mixing before use saves time and efforts. And also helps to mix well.

6. One of the most important thing to give dum to a biriyani or steaming it, you can to cover the pan with an airtight lid or if you don't have that after covering place some heavyweight utensils on it. So that it can be steamed properly.

Preparing the eggs-

• Add 2 tsp oil into a pan, when the oil heats up add the hard-boiled eggs and big pieces of potatoes into it, add some salt to taste and ½ tsp of turmeric powder. Fry the potatoes and boiled eggs for 3-4 minutes until both get golden brown, then remove it from the oil.

• Now add some more oil, once the oil heats up add thinly chopped onions into it, fry the onions on high flame for 4-5 minutes until it gets brown and crunchy. Then remove the fried onions from the oil.

• Now add 1 tsp ghee into the oil, when it melts add the whole garam masalas into it. Add 2 cardamom, 2 cloves and 1 cinnamon stick. Stir it and then add the chopped onion and some salt to taste. Stir it well for 2 minutes.

• Now take a bowl and add ½ cup beaten curd, 1 tsp Coriander powder, 1 tsp cumin powder, 1 tsp turmeric powder,1 tsp Kashmiri chilli powder, 1 tsp salt, 2 tsp biriyani masala, 2 tsp ginger garlic paste. Now mix well and make a nice paste.

• After 2 minutes add this curd mixture into the pan, and mix everything if it's too thick add a little bit of water and ½ tsp of sugar. Now mix again and stir until the gravy starts releasing oil. After 3-4 minutes add the fried potatoes into the gravy, add some water, give it a nice mix and cover the pan for 4-5 minutes let the potatoes cook properly.

• After 5 minutes add the fried boiled eggs into the gravy and mix with it. If the potatoes aren't cooked properly then add some more water and cook for another 2-3 minutes. When the oil starts releasing from the gravy, you know it's ready. Add some fried onions from the top, and give it a nice mix.

For layering-

• Remove the potatoes and eggs from the gravy, then add the remaining water you're strained from the rice into the gravy. Just add ¼ cup or strained water not more than that. Then add half of the rice on it, then add the cooked eggs and potatoes and again layer with the remaining rice.

• Then sprinkle some fried onions on top, sprinkle 1 tsp of biriyani masala and spread 1 tsp of ghee. Then cover the pan properly and let it cook for 8-10 minutes on a medium-low flame. After 10 minutes turn off the flame and open the pan after 2 minutes. Mix the rice with the gravy well and your yummy Egg biriyani is ready.


The 3rd one is Aloo dum briyani:-

If you think that just by using Aloo or potatoes how can make biriyani, then here is the recipe which is so simple and easy, yet delicious that you have to try this at home. It's very similar to the egg biriyani recipe. Just follow the instructions I have given and make this decision and easy biriyani.

Exact time to prepare Aloo dum biryani:-


Preparation :- 5 minutes
Cook :- 40 minutes
Total :- 45-50 minutes
Serve:- 5-6 person

Ingredients:-


For Aloo Gravy-

1. Aloo/potatoes (8-10 big pieces)
2. Beaten curd ½ cup
3. Cumin powder 1 teaspoon
4. Coriander powder 1 teaspoon
5. Kashmiri chilli powder 1 tsp
6. Turmeric powder 1 teaspoon
7. Salt to taste
8. Biriyani masala 2 teaspoon
9. Ginger garlic paste 2 teaspoon
10. Whole garam masalas ( 2 cardamoms, 2 cloves, 1 cinnamon stick, 3-4 black peppercorn)
11. Oil 4 teaspoon
12. Ghee 2 teaspoon
13. Fried onions 1 cup
14. Tomato puree ½ cup
15. Jeera ½ teaspoon
16. Sliced green chillies 2-3

For the rice:-

1. Basmati rice/Any long grain rice 600 gm
2. Oil 2 tsp
3. Whole garam masalas ( 2 bay leaves, 3-4 cloves, 3-4 cardamom, 1 cinnamon stick )
4. Salt to taste

Some tips:-

1. As I have used tomato puree, but you can use chopped tomatoes also, tomato puree makes the recipe much easier, as it takes less time to cook.

2. You can use baby potatoes also or medium size potatoes. Always peel and clean the potatoes before use. If you are using baby potatoes then no need to cut it, you can use it whole in the gravy. Always check the potatoes using a fork, if it's properly cooked or not.

3. **Follow the other tips I have given in the previous biriyani recipe, all are same for this recipe also, so am not repeating it again.

• Add 2 tsp oil into a pan, when the oil heats up add the big pieces of potatoes into it, add some salt to taste and ½ tsp of turmeric powder. Fry the potatoes for 3-4 minutes until it gets golden brown, then remove it from the oil.

• Now add 1 tsp ghee into the oil, when it melts add the whole garam masalas into it. Add 2 cardamom, 2 cloves, 1 cinnamon stick, 3-4 black peppercorn, and ½ tsp of jeera then stir well.

• Now take a bowl and add ½ cup beaten curd, 1 tsp Coriander powder, 1 tsp cumin powder, 1 tsp turmeric powder,1 tsp Kashmiri chilli powder, 1 tsp salt, 2 tsp biriyani masala, 2 tsp ginger garlic paste and add ½ cup fried onions. Now mix well and make a nice paste.

• Then add ½ cup of tomato puree into it, and mix well. Stir it for 2 minutes on a high flame then add the fried potatoes, add 2-3 sliced green chillies and some water. Mix it and cover the pan, allow it to cook for 5-6 minutes on a medium-low flame.

• After 5 minutes check the potatoes. When the oil starts releasing from the gravy, you know it's ready. Add some fried onions from the top, and give it a nice mix.


For layering-

• Remove the potatoes from the gravy, then add the remaining water you've strained from the rice into the gravy. Just add ¼ cup or strained water not more than that. Then add half of the rice on it, then add the potatoes and again layer with the remaining rice.

• Then sprinkle some fried onions on top, sprinkle 1 tsp of biriyani masala and spread 1 tsp of ghee. If you want to spread some yellow food colouring. Then cover the pan properly and let it cook for 8-10 minutes on a medium-low flame.

• After 10 minutes turn off the flame and open the pan. Mix the rice properly with the gravy well and your tasty Aloo biriyani is ready to serve.
