 People like to make this simple and easy mutton biryani in parties or any events like family-get-together. It is also a delicious dinner.

‘Biriyani’-This word came from the Persian word ‘Birian’. This ‘Birian’ word means ‘fried before cooking’. Another fact is that biriyani is originated from Iran. Nowadays biriyani is very much popular with the whole India and Pakistan also and many other countries from the world.

In biriyani, ginger-garlic green chili paste and biriyani masala give basmati rice, an exotic tangy flavour. Mutton plays a vital role to create its awesome taste. You can garnish this biriyani with fried onions and chopped coriander. This meat and rice mixture creates an aromatic taste which makes you fall in love with biriyani.

How to make easy mutton biryani:-

In the below, we give step by step method to make mutton biriyani with proper ingredients list and procedure with the proper time.

Cook :- 1 hr 15 minutes
Total :- 1hr 25 minutes
Serve :- 4-5 person

Ingredients-

For the Mutton curry-

1. Mutton pieces 600 gm2. Fried onions 1 cup3. Ginger -garlic green chili paste 2 teaspoon4. Garam masala powder 1 teaspoon5. Red chili powder ½ teaspoon6. Turmeric powder 1 teaspoon7. Salt to taste8. Cumin seeds 1 tsp9. Biriyani masala 3 tsp10. Chopped coriander11. Chopped mint leaves12. Sliced tomatoes 213. Saffron14. Milk ½ cup15. Oil 4 tsp


For the rice:-

1. Basmati rice/Any long grain rice 600 gm2. Oil 2 tsp3. Whole garam masalas ( 2 bay leaves, 3-4 cloves, 3-4 cardamom, 1 cinnamon stick )4. Salt to taste

Some tips:-

1. You can add potatoes in the Mutton biriyani also. Just cut some potatoes into big pieces, then fry them with some salt and turmeric powder using some oil. Then add the fried potatoes into the curry.

2. You can add chilli powder according to you, it depends on how much spicy you want your biriyani. I personally like to use Kashmiri red chilli powder it gives a nice red colour with some spiciness. You can add normal red chilli powder also.


3. The biriyani masala can be made at home, but as it's a quick and easy recipe that's why I like to use ready-made biriyani masala. It's easily available in markets.


4. You can add some hard-boiled eggs also in the biriyani. You just need to boil the eggs and then add into the rice when layering.


5. Ghee adds a distinct smell in every dish, if you add some ghee when layering the biriyani it will increase the flavours of it. You can use some yellow food colouring into the rice at the time of layering but I do not like to use artificial colours. Some people like to use saffron with some milk for additional colour, but as I wanted to keep the recipe simple I didn't use it. But if you want you can add it.


6. When layering the biriyani never press the rice on top of the Mutton curry, always spread it gently using a spoon. 


7. One of the most important thing to give dum to a biriyani or steaming it, you can to cover the pan with an airtight lid or if you don't have that after covering place some heavy weight utensils on it. So that it can be steamed properly.

Preparation-

Preparing the rice-

• Take some long grain basmati rice and soak it for 20 minutes in lukewarm water, then take a pan to add some water and boil it, then add 4 tsp salt in it to flavour the rice, add 1 tsp of ghee, 1 tsp of ginger garlic and green chili paste, 

then add some whole garam masalas 2-3 bay leaves, 1 tsp cumin seeds, 7-8 cloves, 3-4 cinnamon sticks, 3-4 cardamoms in the water, then cover it and allow to boil for another 3 minutes.

• Then add the soaked rice in the flavoured boiling water, after 5 minutes check the rice a give it a gentle stir so that it doesn't break the grains, then when the rice is ¾ cooked drain the water.


Preparing Mutton curry-

• Take big pieces of mutton, add 1 cup yogurt, 1 cup fried onions,2 tsp of ginger garlic green chili paste,1 tsp cumin seeds, 1 tsp red chili powder,1 tsp of turmeric powder, 1 tsp of garam masala powder, ¼ cup of mint and coriander leaves, 

few strands of saffron, add some whole garam masalas ( bay leaves, cloves, cardamoms, cinnamon sticks) then mix well with the pieces of mutton.

• then add the mutton mixture into a pressure cooker, add some sliced tomatoes and some salt to taste, finally add ½ cup of milk and 1 tsp of oil then mix nicely. Then allow it to cook under pressure for 4 whistles.

• After 4 whistles of pressure cooker turn off the flame and don't open it, and let it cook for another 10-15 minutes. Then check the meat after 12 minutes and it's done, start preparing the biriyani layers.

Layering-

• First place a layer of cooked mutton and gravy, then add a layer of cooked basmati rice, do not press the rice and spread it gently, add some ghee and fried onions, then repeat the layers again, finally on top of the rice sprinkle some biriyani masala, ghee, and fried onions.

• Cook this for the first 7 minutes in high flame and 2nd 8 minutes in low flame. After 15 minutes turn off the flame and mix the rice gently with the meat.

• Serve the biriyani and garnish it with fried onions and chopped coriander, your aromatic mutton biryani is absolutely ready.
