Papad Aloo sabzi is a vegetarian dish which also called potato papad curry.
It's a very famous Rajasthani dish, in which yoghurt is specifically used to make a thick gravy, and there are soo many Indian spices which go into this dish.

But the recipe or Papad which am gonna share today is a Bengali vegetarian recipe which is very easy and simple, takes very little time. And it's very appetizing.
The reason why I called it a lockdown friendly dish, that it doesn't require too many ingredients.

Whenever you are running out of vegetables or meat you can just make it with very minimal ingredients. Or if you are in a rush and don't have time to make a sabzi just go for it, you just need 15-20 minutes to prepare Papad Aloo sabzi.

It can be served as a main course dish with some homemade rotis, or with rice as well.
The main ingredient of it is the papad.


What is papad?

Papad is a round-shaped thin and crispy flatbread. Which usually made with lentils, rice or chickpea, or sometimes with potatoes.

It's a very famous snack all over in India and outside of India also. It's typically served at the end of the meal, with some Chatni or Pickle in India. It's a part of our everyday meal, which is going well with Mung daal and Any chatni or Pickle.

It's a sundried lentil or rice flat thin dough, which needs to be fried before use. It's can be either fried in oil or can be dry roasted. It's also a very good tea time snack.

In this recipe, it also includes Aloo or potatoes. And some onions and garlic are just needed. If you are too lazy to cook any vegetables or meat, then you need to try this quick and simple Bengali vegetarian recipe. And you'll love it. Exact time to prepare Papad Aloo sabji:-


Preparation :- 5 minutes
Cook :- 20 minutes
Total :- 25-30 minutes
Serve:- 4-5 person



Ingredients:-


1. Papad 4-5
2. Aloo/ potato (2-3 medium size)
3. Oil 6 teaspoon
4. Chopped onion 1
5. Chopped garlic 1 teaspoon (2-3 cloves)
6. Panch phoron ½ teaspoon
7. Turmeric powder 1 teaspoon
8. Red chilli powder ½ teaspoon
9. Salt to taste



Some tips:-


1. Always use lentils Papad for this recipe. It tastes good and soaks the gravy well. Which makes this dish more flavoursome.

2. You need to peel the potatoes properly and cut into thin slices so that it can be Cooked easily and take less time.

3. Do not use raw papad in the gravy. Always fry it in oil, you can also dry roast it on a Tawa.

4. Do not fry it too much otherwise, the papad can be get burnt. And it will spoil the taste of the dish.

5. Cut the papad into little bite-size pieces, so that it can be easily put into the gravy. And mix well.

6. You can add little bit garam masala powder and ghee on top, to increase the flavours of the dish.



Preparation:-


• First take a pan to add 4 tsp oil in it, when the oil heats up to add some raw papad in it. You can cut the papad into 4-5 pieces, to make bite-size pieces. In 5-10 seconds the papad starts releasing in size, then remove it from the oil.

• Now add some more oil into the pan, when it heats up add ½ teaspoon of panch phoron or Indian five-spice blend. Then add the chopped onions and some chopped garlic into the pan, stir it for 2 minutes. When the onions get a little brown.

• Then add the sliced potatoes, add some salt to taste, 1 tsp of turmeric and ½ tsp red chilli powder. Mix well and fry it for 2 minutes. After 2 minutes add 1 cup water into the pan, mix well and cover the pan. Allow it to cook for 5-6 minutes on a medium-low flame.

• After 6 minutes check the potatoes are cooked or not. If the potatoes aren't cooked then add some more water and cover the pan for another 2-3 minutes. Then open the pan and add the fried papad into the gravy. Mix well with the gravy and turn off the flame.

• Cover the pan for 5-6 minutes so that the papad can soak the gravy properly. And after 6 minutes your papad Aloo sabzi is absolutely ready.


As the recipe is very quick and easy, it's healthy also. It's a very light dish which doesn't require too many spices and ingredients.
The papad has lentils. It can be served with roti or with steamed rice, or parathas also.

Although my mother makes it often, and as it's very easy to make, I thought I should share this with you.

At this time of lockdown when meat or vegetables aren't available every time. I think it's an easy alternative to make the main course dish just using Papad and some spices.
